Ingredients and accessories for the potato tortilla with ginger rice:

  1. 1/2 teaspoon salt
  2. 113 grams eur
  3. 57 grams of wheat flour
  4. 1 cubic piece of fresh ginger
  5. 57 g butter or vegetable oil (or mixture)
  6. 1 organic egg
  7. 1 tablespoon ground chia seeds
  8. 3 tablespoons of water
  9. 35 grams ur
  10. 10 small potatoes (or 5 large potatoes). refined
  11. 60 g brown organic rice
  12. 130 grams EUR
  13. 1/2 onion, chopped
  14. 1 clove of garlic
  15. 5 tablespoons soy sauce
  16. 1/3 tablespoon pepper

Instructions for ginger potatoes and rice cakes

  1. You want to read all of the instructions before you begin so you can roughly plan your time.
  2. First the potato pancakes. They are prepared in two main phases: the first is the preparation of pâte choux (light dough for cakes). The second is the usual preparation of mashed potatoes. Then connect, complete the slices and fry.
  3. Pâte Choux: Bring 113 grams of water, 57 grams of vegetable oil and salt to a boil. Add the flour and mix for a few minutes. Continue cooking for a minute to reduce the amount of water. Remove from the oven and refrigerate until the batter is hot and not boiling. Add an egg and break it into the egg (one tablespoon of ground chia seeds and three tablespoons of water). Stir well until everything is well mixed.
  4. Mashed Potatoes: If you paused in the previous step, start with mashed potatoes. Boil the peeled potatoes, halved for faster cooking, for about 15 minutes. Dry. Add five tablespoons of water and 7 tablespoons of alternative vegetable oil (or olive oil). Grind some pepper into the mixture. Then use a shredder and grind.
  5. Combine pâte choux and mashed potatoes. Mix well. Finish the thin slices with your hands and dust both sides with flour (I used cornstarch). Refrigerate the extra potato tortillas you don't want to eat right away.
  6. Prepare a piece of rice and cook it, adding pepper. I use organic brown rice, which takes 45 minutes to cook.
  7. Chop or mince the onion. Add a little oil (I used corn/corn oil) in a skillet over medium-high heat. Reduce to medium/low after adding onions. Mix ginger and garlic (you can squeeze/grind the garlic first with a knife tip to get a finer slice).
  8. Add the ginger and garlic and gently sauté the onions for about 10 minutes. Gradually stir and sauté very gently for another five minutes or so, being careful not to burn the garlic.
  9. When it's cooked, add all this and soy sauce to the rice. Mix well and let the rice mixture simmer for a few more minutes over very low heat. Make sure there is moisture.
  10. Heat a skillet over medium-high heat, add about 8 tablespoons of desired cooking oil (I used corn/corn oil). The oil should cover about 1/4 inch of the potato tortilla before it can be fried. Fry for about 7 minutes on each side (but adjust if necessary). Serve potato pancakes with rice. Please enjoy the food!
