- 150 gm black urad daal
- 50 gm rajma/kidney beans
- 2-3 bay leaves
- 1 tsp cumin seeds
- 2 tbsp gram flour
- 2 tsp ginger garlic green chilli paste
- 2 grated tomatoes
- 1 small cup cream/malai
- 1 tsp Kashmiri red chilli powder
- 1 tsp dhaniya powder
- 1 tsp salt
- for garnishing
- as needed Butter
- to taste lemon juice
- as needed fresh coriander
- 1 glass milk
Steps to make to make Daal Makhani
- Pressure cook soaked(overnight) urad daal and rajma to 5-6 whistles
- Whisk it thoroughly when done.Rajma beans should be completely soft.Add half a glass of milk to the boiled deal and let it simmer on low heat.
- In a pan,add 2 tsp ghee,bay leaves,and cumin seeds.saute it well.
- Add ginger,garlic,green chilli paste and roast well.
- Add in 2 tsp of besan and roast more until the raw smell goes off.Besan helps in binding the ingredients well and gives a thick luscious texture to daal.
- Add in grated tomatoes.cover and cool until the mixture reduces to half.
- Now add in the cream/malai
- Let it cool nicely and then add to boiling daal.
- Add in enough butter.For a perfect taste I suggest let the daal simmer in low heat for around 30-40 mins.This is a secret tip behind restaurant style daal makhani.They let the deal keep on cooking for hours.
- Mix well.Plate it and garnish with fresh cream,more butter and fresh coriander.Squeeze in some lemon.Restaurant style daal makhani is ready.
